Professor Altonia Racconto

The first scientist to isolate the Parmesan genome.

It took us 2 years to track down Professor Altonia Racconto to his lab in the hills above his native town of Venice. Since a young boy he has been fascinated with working out why the city’s canals produce such strong odours, and has been working on the famous Unità Veneziana di Isolamento del Canale. He has since left the project to come and share our facilities and knowledge at BOSInd.
